Recipe: Chicken, pesto & cheese bagel

METHOD
1. Slice the bagel in half
2. Put the bagel in the toaster and toast until light golden
3. Spread a teaspoon of pesto onto each half on the bagel
4. Thinly slice the cooked chicken and tomatoes
5. Layer the chicken, tomatoes and then the cheese on one half of the bagel
6. Place the layered half of the bagel under the grill on a high heat for 3 minutes, or until the cheese is bubbly
7. Remove the bagel from the grill and place the other half of the bagel on top to make a sandwich
8. Cut the finished bagel in half or quarters to make eating easier
9. Wrap in cling film, a sandwich bag or foil, or place in an airtight container to go in the lunchbox
